Red Weekday Curry

Ingredients

for 2 Portions

  • 1 pack Luya Chunks Simply Natural (175g)
  • 250g snow peas (alternatively green beans)
  • One piece of ginger, peeled and finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 onion, finely chopped
  • ½ chili, finely sliced into rings
  • 1 tbsp coconut oil
  • 1-2 tbsp red curry paste
  • 250 ml coconut milk
  • 1 lime
  • 1 tsp soy sauce
  • Optional: coriander and Thai basil for garnish

Preparation

1. Prepare the vegetables and the Luya
Fry the Luya Chunks in a little coconut oil over a medium heat for 5-6 minutes and set aside. Blanch the snow peas in salted water for approx. 2 minutes. The snow peas should still be crunchy. Drain and rinse with cold water.

2. Prepare the curry
Sauté the onions, ginger and garlic in a little coconut oil for approx. 2 minutes. Add the chili and curry paste and fry for a further 2 minutes. Then deglaze with a little water. Add the coconut milk, juice of ½ a lime and soy sauce and simmer on a low heat for 10 minutes. Add the snow peas and Luya Chunks and cook for 5 minutes. Season to taste with salt.

3. Serve
Arrange the finished curry in deep plates. Garnish with coriander, basil and lime wedges. Serve with basmati rice. Enjoy!
